KitchenAid Strawberry Ice Cream (No Refined Sugar)

Alright, so how exactly do you make homemade strawberry ice cream without any white refined sugar? Let me tell you!

First, gather up your ingredients. You’ll need heavy cream, whole milk, fresh strawberries, honey, a splash of vanilla, one lemon (or lemon juice) and a pinch of salt.
How to Make Strawberry Ice Cream Without Refined Sugar
First up, cut up about 2 cups of fresh strawberries into fairly small chunks. Measure the berries AFTER they have been cut. If you place the whole strawberries in the measuring cup they will take up more room and you’ll have less of a strawberry flavor. I chopped the berries and as I went I would put them in the measuring cup until I had enough.
In a large mixing bowl, add the honey to the chopped berries.

Using a potato masher or a fork, mush the berries. I started with the potato masher then switched to a fork that actually worked better. There will still be some chunks, but that is good. I like a bit of fresh berries mixed into the ice cream for texture!
If you do not want any small bits of berry at all, put everything into a food processor or blender to make it into more of a fine “syrupy” consistency.

Next, add in the same bowl the heavy cream and milk. Then, add in the splash of vanilla, pinch of salt, and lemon juice.

Mix everything up with a whisk (a whisk is really crucial here to mix the honey thoroughly, a spatula won’t work). Place this liquid mixture in your freezer for one hour.

Make sure your KitchenAid ice cream attachment has been in the freezer for at least overnight, but I prefer to have it chilled for at least a full day. Pour the mixture into the KitchenAid ice cream attachment and let it spin for about 20 minutes.

You can watch this video below to see mine spinning after about 10 minutes! Sometimes the ice cream “runs over” the top as you can see in this video. I just take a spatula and push it back in.

This is about what it will look like when it is ready. Perfect soft serve strawberry ice cream! If you wanted soft serve, go ahead and serve it up.

If you want it more like traditional ice cream, go ahead and put it in a large bowl and freeze it. By the next morning mine was the PERFECT consistency. This is what that looked like! (Image below)

I like that this ice cream doesn’t have such an overpoweringly sweet flavor and almost taste like a sweetened frozen yogurt/ice cream combo. It’s very tasty!

Strawberry Ice Cream Using Honey Instead of White Sugar
Equipment
- KitchenAid Ice Cream Attachment
Ingredients
- 2 Cups Heavy Cream
- 1 Cup Whole Milk
- 1/2 Cup Honey
- 1 splash of Vanilla
- 1 Tbsp Lemon Juice
- 1 pinch of Salt
- 2 Cups Chopped Fresh Strawberries
Instructions
- Chop up 2 cups of fresh strawberries into small chunks
- Mix Strawberries with Honey
- Mash the Strawberry/Honey Mixture with a masher or fork
- Add all other ingredients to the bowl and mix with a whisk
- Freeze liquid mixture for 1 hour
- Pour Liquid into KitchenAid ice cream attachment and spin for 30 minutes (make sure the kitchenaid ice cream attachment has been in the freezer already for about 24 hours!)
- Enjoy as soft serve or freeze until the next day!
