Almond Flour Healthy Chocolate Chip Cookies
Ingredients
- 3 Cups Almond Flour
- 1/2 Cup Softened Butter
- 3/4 Cup Coconut Sugar
- 2 Teaspoons vanilla extract
- 1/2 Teaspoon baking soda
- 1 teaspoon salt
- 1 Cup of chopped Enjoy Life Dark Chocolate Chips
- 2 Eggs
- 1/4 cup Coconut Oil
Directions
- Preheat oven to 350 degrees.
- In a stand mixer, add together the butter, coconut oil, coconut sugar, vanilla and eggs. Mix just until combined.
- Add in the baking soda, almond flour, and salt. Mix again until just combined
- Stir in the chopped chocolate chips (or just use mini chips) with a spatula.
- Bake for 12-14 minutes
